Easy Roast Chicken

I know that most people don’t think a roast chicken is the easiest thing to cook, but I promise you, it is. It does take some time, but this is my lazy dinner night recipe. It’s really adaptable too! 

You’ll Need:

  • 1 Chicken
  • Root Veggies/Squash/Onion/Ect.
  • 2 Whole lemons
  • Dutch Oven
  • Seasoning
  1. Set your oven to 475 F.
  2. Cut up your veggies. I use what I have on hand. Normally that’s sweet potatoes, onions, and maybe mushrooms Whatever you have, just make sure it’s enough to cover the bottom of the dutch oven. The smaller you cut them the softer they’ll get, just do whatever you like. 
  3. Cover the bottom of your dutch oven with the veggie mixture. To this, add a 1/2 cup of water. 
  4. Quarter your lemons.
  5. Pat your chicken dry and tie up the legs with kitchen twin. (Pro Tip: Unscented Dental Floss Works fine too, or really dental floss in general.)
  6. Put one piece of lemon inside the body cavity of the chicken and place the chicken in the dutch oven on top of the veggies. Place the rest of the lemon pieces around the chicken.
  7. Season you chicken! You can use anything really, they have some great seasoning blends available at most stores (just be careful of the MSG content if that’s something that worries you like it does me.) I really like some of the spice blends I get from a local vendor. But a recent favorite has been when I drizzle honey over the chicken, then add a healthy dose of curry and some salt and pepper. It’s really just up to you, it’s hard to mess up I promise! 
  8. Put the cover on your dutch oven and put the chicken in your preheated oven for 45 minutes. After the 45 minutes Remove the cover and cook for an additional 45 until the skin is crispy and the meat is no longer pink. The best place to check for this is the leg joint as it’s usually the last to cook.

I normally will put this in the oven first thing when I get home. I workout, and do some house stuff and the chicken ends up pretty perfect without much fussing. The next day we have soup, and the day after that some bone broth. I can post about that if anyone is interested. Let me know if you try this and how it turns out for you!
